Carrot Coconut Soup

It's officially Autumn and Soup Season! This week, I'm offering a short blog post on one of my favorite soups for Spring or Fall: Carrot Coconut soup. This one is from John Douillard's LifeSpa website. It's delicious and easy. Only "hard" part is peeling and chopping the carrots and parsnips - It would be a great soup to make with a friend or spouse to help with the prep part! But once the carrots and parsnips are roasting in the oven, the rest is a breeze! So healthful and delicious and it's completely vegan - It's a great dish to take to a potluck where you know there will be vegans/vegetarians. Serve with salad and bread for a complete meal, or serve as a starter for a Fall supper!
