Carrot Coconut Soup

It's officially Autumn and Soup Season! This week, I'm offering a short blog post on one of my favorite soups for Spring or Fall: Carrot Coconut soup. This one is from John Douillard's LifeSpa website. It's delicious and easy. Only "hard" part is peeling and chopping the carrots and parsnips - It would be a great soup to make with a friend or spouse to help with the prep part! But once the carrots and parsnips are roasting in the oven, the rest is a breeze! So healthful and delicious and it's completely vegan - It's a great dish to take to a potluck where you know there will be vegans/vegetarians. We say Namaste at the end of every yoga class - but what does it really mean? Yoga has never been just about a physical workout for me. It runs much deeper than that, and in fact, my beginning experiences with yoga were through yogic philosophy and meditation.
