It's officially Autumn and Soup Season!
This week, I'm offering a short blog post on one of my favorite soups for Spring or Fall: Carrot Coconut soup. This one is from John Douillard's LifeSpa website. It's delicious and easy. Only "hard" part is peeling and chopping the carrots and parsnips - It would be a great soup to make with a friend or spouse to help with the prep part! But once the carrots and parsnips are roasting in the oven, the rest is a breeze!
